Peach Sundae Recipe
Ingredients
• 4 large ripe peaches
• 1⅓ cups sugar
• 1 3-inch piece gingerroot, peeled and split
• 2 stalks lemongrass, crushed
• 1 lemon, halved
• 2 cups heavy cream
• 1 tsp. pure vanilla extract
• Raspberries or other seasonal berries
• Vanilla ice cream

Directions
1. Plunge the peaches in boiling water for 30 seconds, transfer them to a bowl of ice water, then drain and peel. In a pot just large enough to hold the peaches, stir together 1 quart water, 1 cup sugar, the ginger, and lemongrass. Squeeze in the lemon juice, and add the halves. Bring to a boil, add the peaches, and boil for 1 minute more. Let the peaches cool in the syrup, then cut into chunks. Discard the lemons; strain the syrup, and reserve it.
2. Whip the cream with the vanilla and the remaining sugar until medium peaks form. Stir together the peaches, ½ cup of the syrup, and a handful of the berries, and divide among four dessert glasses. Add whipped cream, top with two scoops of ice cream, and finish with more whipped cream and berries.
