Fried Chicken in screw pine leaf

Fried Chicken in screw pine leaf (Serves4)
The Screw pine leaves give additional fragrance and adds a unique touch to this delightful dish


Ingredients
Chicken Fillet 500 g (1 lb ½ oz ), cut into 30 small pieces
Sugar  1 Tbsp
Sesame oil 1 Tbsp
Fish Sauce 2 Tbsp
Dark Soy Sauce 1 Tsp
Screwpine(Pandan) Leave 15
Cooking Oil for deep-frying

Paste
Garlic 4 Cloves, peeled
Ground white pepper 1 tsp
Coriander Leaves (cilantro) 3 sprigs, chopped
Shallots 4, peeled
Lemon Grass 1 stalk, tough outer leaves removed, ends trimmed and sliced

Preserved
Soy Beans 1 Tbsp


Direction
1.  Combine paste ingredients in a blender and process until fine. Transfer to a bowl and add chicken, sugar, sesame oil, fish sauce and dark soy sauce. Leave in col place to marinate for 30 minutes.
2.   Fold a crewpine leaf into a cone. Place a piece of marinated chicken inside and tuck ends of leaf back into cone to create a tight parcel. Repeat until ingredients are used up. Heat oil and deep-fry parcels for 10 minutes or until chicken is cooked. Remove and drain well.
3.  Leave parcels to cool slightly before serving
