Pork Fried Rice

Pork Fried Rice (serves 4)
A unique combination of rice stir-fried with meat.


Ingredients
Cooking Oil                       2 Tbsp
Garlic                                 3 cloves, peeled and crushed
Pork                                   300 g (11 oz). finely sliced
Egg                                   1
Onion                                1, peeled and diced
Fish sauce                       1 Tbsp
Sugar                                ½ tsp.
Soya sauce                      2 tbsp.
Cooked Rice                   750 g (1 lb 101/2 oz)
Ground white pepper to taste

Garnish
Cucumber                         1, thinly sliced
Coriander leaves              1 sprig
Lemon                                1

Directions
 1.    Heating oil in wok and brown garlic. Add pork and saute for about 3 minutes. Add onion, soya sauce,fish sauce and sugar. Stir well, adding a little water and oil if mixture become too dry.
 2.   Turn up heat add egg and saute for another 3 minutes. then put rice and saute for a futher 3 minutes. Season to test with pepper.
 3.  Dish out and serve garnished with cucumber and coriander leaves. squeeze lemon juice over rice for an extra tangy flavour.
