Pineapple fried rice (serves4)
A dish of stir-fried rice sweetened with pineapple and made complete with chicken and sausage.
Ingredients
375g cooked rice
1 ripe pineapple, 2 kg
3tbsp cooking oil
10 shallots, peeled and sliced
85g dried shrimps, soaked in hot water for 5 minutes, drained and chopped
280g chicken meat, cut into small cubes
4 Chicken sausages, cut into small cubes
3tbsp fish sauce
4tbsp light soy sauce
11/2tbsp sugar
Garnish
1 spring Coriander leaves, chopped
1 red chili, slice and soaked in cold water
Direction
Cut pineapple in half and scoop out flesh. Cut flesh into small cubes. Set pineapple shell aside.
Heat cooking oil in a wok and fry shallot until brown and crisp. Set aside. Using same oil, sauté dried shrimps until fragrant then add chicken and sausage cubes and fry until meat cooked.
Add fish sauce, soy sauce, sugar and cooked rice. Mix well then add pineapple cubes and fry for 2-3 minutes. Set aside.
Heat pineapple shell in a 180 degree Celsius preheat oven for 10 minutes. Remove from oven and fill with pineapple fried rice.
Garnish rice with crisp-fried shallots,coriander leaves and red chilli slice. Serve.
