Spicy and Sour Soup with prawns (Tom Yum Kung)

Spicy and Sour Soup with prawns (serves 6)

Tom Yum Kung is one of my favorite soup; this spicy and sour soup has unique taste with refreshing smell of lime.  This soup is low fat and low calories which is good recipe for your diet menu.


Ingredients
500g Prawns, peeled and deveined.
600g Mushrooms, cut half.
40g Lemon Grass, peeled outer leave and cut into short length(1cm)
4 Kaffir Lime leaves
2 Coriander roots, bruised
2 red chillies, slice and soaked in cold water
150g Chilli paste
2,500g Soup Stock
10g Tamarind Juice (if you can get Tamarind you can use citric acid instead)
15g Salt
100g Fish Sauce
15g Lime Juice

Garnish

2 spring Coriander leaves, chopped

Ingredients of Chilli paste
10g Dried Chilli
40g Shallots
10g Galangal, cut into pieces about  1 cm
100g Vegetable oil
20g Sugar
10g Hot Chili

Direction
Roast the chilli paste ingredients and pound until ground then fry with oil until fragrant and take aside.
Heat the soup stock. Add coriander roots, lemon grass and salt until boiling.
Add Chilli paste, Prawns, Kaffir, Mushrooms, Lime leaves and Chillies. Boil for 5 minutes. Then add Fish Sauce, Tamarind Juice and Lime Juice.  Stir well and ladle soup into serving bowls. Garnish with coriander leaves. Serve hot.
