Chicken soup
with Galangal (serves 6)
"Tom Kha
Gai" is one of the most popular thai dish among Thai people and tourist.
This wholesome chicken soup has the refreshing taste of lemon grass, kaffir
lime leaves and unique flavor of galangal.
Ingredients
500g Chicken
breast, skinned and diced
250ml water
1litre Coconut milk
200g Mushroom
1knob Fresh Galangal (1cm), peeled and finely sliced
2stalks Lemongrass, tough outer leaves removed, ends
trimmed and cut into short lengths
2 springs Coriander, leaves and roots
separated and chopped
3-5 Kaffir Lime leaves
10g Salt
11g chicken stock
powder
3 Hot Chillies,
Bashed
50g Lime Juice
2tbsp Fish sauce
Direction
Boil water in a pot
with half of coconut milk. Add Galangal, Lemon grass, Salt, Chicken Soup powder and coriander roots.Cook until
fragrant.
Add chicken and Mushroom.
Simmer over low heat for 15 minutes.
Put in remaining
coconut milk, stir and turn up heat. After soup return boil immediately add kaffir
lime leaves, Hot Chilli. Remove from heat.
Season with fish
sauce and lime juice. Ladle soup into individual serving bowls. Sprinkle with
coriander leaves. Serve hot.
